Ingredients:
5oz. Spring Mix
4oz. Tofu (cubed) (season with favorite seasoning)
2oz. Bell Peppers (thinly sliced)
2oz. Soybeans (Edamame)
2oz. Pickled Onion
2oz. Roasted Garlic Cloves
2oz. Pickled Ginger
2oz. Fresno Chili (thinly sliced)
2oz. Mandarin Oranges (segments)
2oz. Carrots (shredded)
2oz. Scallions (sliced)
1oz. Chow Mein Dried Noodles
2oz. Asian Dressing
Instructions:
- Prep your ingredients. Wash and slice all produce and toppings as listed. Keep them separated for easy plating.
- Cook the tofu. Heat a skillet or grill over medium heat. Sear tofu cubes on all sides until golden brown and crisp, about 1–2 minutes per side.
- Dress the greens. In a large bowl, toss spring mix with the Asian dressing until evenly coated.
- Build the salad. Transfer the dressed greens to a serving bowl or plate. Arrange the veggies — bell peppers, edamame, pickled onion, roasted garlic, pickled ginger, Fresno chili, mandarin oranges, and carrots — in sections over the top.
- Finish strong. Top with seared tofu, then sprinkle with crispy chow mein noodles and fresh scallions.
